Caramel and Apricot Cake



I envited a few friends to have dinner with us at our home. It's perfect idea to envite just a few friends over so I'll get to talk and mingle with them very well. Too many people is hard to divide my time between cooking, intertaining and so on.
Here's what I made for our dessert... it's a yellow cake with two-layers of caramel cream and one-layer of apricot. This is difinetely a very light, moist and delightful cake with a punch of nutty taste of toasted almonds. This is a great dessert to have, if you'll like a cake that's not too rich and heavy.

Carrot cake loaded with goodies


This is my other version of carrot cake loaded with stuffs (raisins, tons of grated carrots, and nuts) or I could make also this extra heavier version too...which is tons of carrots, raisins, pineapple, nuts, and coconuts. This is more likely eating veges and fruits than eating a cake itself.

Ballerina Barbie Cake






I made this cake for my daughter's 3rd birthday. It looks easy but this cake took me 5 hours to make this cake. Maybe because it is my first time making ballerina cake. I guess not too bad hah.
I made a yellow cake with butter cream icing because most kids will prepare to eat yellow cake. My daughter eat chocolate only so my daughter did not eat this cake at all (too bad). I guess she had a bad experience when I made her first yellow cake on her first birthday.



Carrot Cake


This is my first carrot cake with low-fat cream cheese icing(of course). I can't cut it out all the way to non-fat, otherwise it will not be tasty. It is relatively quick and easy cake that it will only take 2 1/2 hours to make if you're working it straight. Wish you can try one!

Fresh Fruit cake


I made this cake for my my friend Joy (thank you Joy for the cake order). This is a chocolate cake filled with strawberry and vanilla swiss buttercream, embellished with basket wave design, top with glazed fresh fruit and my hand-made blue butterflies.

gumpaste cake



I made this dark-chocolate cake with orange-chocolate mouse filling pre-iced with butter cream and covered with fondant. This cake I made for my friend's daughter celebrating her dance recital. Eventhough this cake looks very simple but it is quite a labor intensive especially if you're unsure of what your really heading to--- Over all, it was fun making it.

Tropical Chocolate Chip Cookies



It's made of coconut, banana, oatmeal, walnuts, chocolate chips, flour, brown sugar, butter, and egg. It's more like a sweet on-the-go breakfast food bar. I tried to formulate a cookie that can be breakfast food. My daughter has a sweet tooth and loved this cookie too.
I have to hide my cookie jar because she will be asking for more if it's front of her to see. As my 2-year old daughter says "some morrrrre cookie". Love her so much that I can't help but give her more tiny pieces of cookies at a time.

Caramel Creme Cake


Here's one my cake that I made last year --- it's checker cake with yellow and chocolate cake, filled with apricot filling and two-layers of caramel creme fillings. This recipe I got from Chef Bo Friberg's cookbook. It's complicated and a long process to make, but making it makes me feel like I'm an aspiring pastry chef. I enjoy making it and even more promising when people who tasted my cakes really love it. But I still have to make and practice more. Hopefully I will find clients that would love to try my cakes one day.

Oatmeal Raisin Cookies


I just finished baking my oatmeal raisin cookies. It's the usual flour, egg, raisins, butter, sugar and oatmeal, but I did a little twist--- I poached the raisins with fruit juice, rum, white wine and sugar. It is really yummy!
